This dinner has been one of my go to meals now for years. Especially with the cooler temps starting to hit, I love the creamy stuffing, moist chicken and roasted veggies for a great fall dinner. This meal is versatile, in that it’s great for a dinner party, family dinner and kid friendly!

I have a few ways of making this meal. I’m going to give you the easy version as well as some notes on making some of the ingredients yourself.

Chicken Tortellini Soup

Plain and simple, this soup is just flat out cozy for those chill nights and it’s super filling! I’ve been adding tortellini to my soups since like… a long time, k?

Tortellini is a staple that I keep stocked in the freezer and use to bulk up my chicken soup, tomato soup, sausage, potato and kale, etc. There are so many varieties that you can mix it up with what flavors of tortellini you use in your soups.

For this dinner night I had the pleasure of cooking with an instagram buddy, Ashley Knie from @designsbyashleyknie and she made a Basil, Coconut, Curry Chicken dish that she’s sharing on her blog!

  • 4-5 chicken thighs, thawed
  • 1/2 yellow onion, diced
  • 3 ribs of celery sticks, diced
  • 2 carrots, peeled and chopped
  • 8 cups of chicken broth or stock

Easy Breakfast Burritos You Can Freeze

I don’t know about you but I’m the worst with eating breakfast, especially during the week! Unless it’s something quick I can make, I’m usually running out the door and regretting my lack of breakfast by lunch.

These easy breakfast burritos are quick and freezer friendly! So I can take one out of the freezer and pop it in the microwave!

Let’s get started!


  • 8 eggs scrambled
  • 1 pound ground breakfast sausage, or bacon, or ham (add all 3 if you have a meat lover in the family!)
  • 2 cups southern style hash browns (can be found in the freezer section at the grocery store)
  • Salt & pepper to taste
  • Dash of garlic salt
  • Favorite slices of cheese
  • Large soft tortillas
  • 3 Tbs vegetable oil
