🐟 Seared scallop dinner. 12/13/19

I skipped a post for yesterday since it was our leftover dinner for the week. We had leftover stuffed peppers. But on Friday we had one of my favorite dinners—plump, seared, ocean scallops with new potatoes and snow peas. And don’t forget homemade tartar sauce! Yum! It makes an ordinary week night dinner seem like a special occasion.

I start steaming the potatoes ahead of John searing the scallops. They only take 15-20 minutes depending on their size. When they are done John heats up the cast iron pan with a little vegetable oil until it is smoking and then lays the scallops in.

In the meantime I have stringed and refreshed the snow peas in some ice water and put them in the pan that the potatoes have just come out of. I spray it with some buttery Pam first. The water still clinging to the snow peas gives

Ridiculously Loaded Twice Baked Potatoes

You haven’t had baked potatoes until you’ve had my ridiculously loaded twice-baked potatoes! What makes them so ridiculously loaded? They’re filled with chicken, shrimp, broccoli, AND cheese. Then of course there’s the creamy mashed potatoes and chopped bacon bits on top. These are so good and I’m not just saying it because it’s my recipe. It’s honestly one of my favorite original recipes. I have to pat myself on the back for this one. So, I wanted to share it with you all so yall can eat like I do. Butter & Dill Roasted Salmon

Salmon filet is one of those things I eat at least 2 to 3 times a month. I know most people like to purchase the portion sizes but that’s not for me. I need more than a portion size. I can literally eat a pound or a pound and a half of salmon filet in one setting. Plus, I find that it’s cheaper to purchase salmon by the pound anyway. Typically a 6 oz. portion of salmon filet is sold for about $3.99 or $4.99 whereas a whole pound of salmon is either $6.99 or $7.99. When you purchase by the pound you can control the portion sizes, essentially getting four 4oz. portions or two 8oz. portions out of one pound of salmon. If you were to buy a pound of the pre-portioned filets it’d be between $16.00 to $20.00! Even if you just bought two portioned filets, it’d still

Delicious Thai Red Curry!

THAI RED CURRY

Recently I had been to a Thai restaurant, the recipe I like the most is Thai Red Curry. It’s a little spicy and sweet at the same time. Lots of veggies with shrimp dipped in coconut gravy is just amazing!

INGREDIENTS:
FOR THE CURRY
Shrimp:1 lb
Chinese Eggplants cut in half:2
Thai Red curry paste:2 tbs
Green Beans cut in half:1/2 cup
Red/Green Bell pepper: 1/2 cup
Cut Carrot /Onion in julienne:1/2 cup
cut in julienne
Salt:1/2 tsp
Bamboo shoot:1/2 cup
Fresh Basil Leaves:15
Olive oil: 2 tsp
Garlic sliced:1 tbs
Mushroom Sliced:1/4 cup
Coconut milk:2 cup

FOR RED CURRY PASTE:
Red bell pepper:1
Ginger: 1/2 tsp
Garlic:5 cloves
Lime juice:3 tsp
Ground black pepper:1/4 tsp

Egg Curry Recipe

Indian cuisine is quite famous for its spicy characteristics. They have a nice aroma and they taste good. Today I tried this egg curry and it was delicious.

Prep time:20 min
Cook time: 20 min
Total time: 40 min

Ingredient:
Boiled eggs: 4
Medium size Boiled potato(cut in cubes): 2
Large tomato chopped: 1
Ginger-garlic paste:2 tsp
Large Onion chopped: 1
Salt:1/4 tsp
Green peas:1/2 cup
Turmeric powder:1/4 tsp
Kashmiri Mirch powder: 1/2 tsp

Chilly powder: 1/4 tsp
Garam masala: 1 tsp

Instructions:

  1. Heat oil on a saucepan, add chopped onion and fry till golden brown. Add ginger-garlic paste, Kashmiri Mirch, turmeric, chilly powder, salt and stir fry on low heat.
  2. Now its time to add the chopped tomato, potato,and egg, green peas, garam masala and 1 cup water to the pan. Let it cook for about 5 to 7 minutes till the tomatoes

Black Beans with Brown Rice

INGREDIENTS:

Canned 15 ounce Black beans:2

Brown rice: 1 cup

Fresh avocado peeled, pitted and sliced: 2

Vine tomato chopped: 1 cup

Onion chopped: 1/2 cup

Olive oil: 2 tsp

Salt:1/2 tsp

Garlic powder: 1/4 tsp

Ground black pepper: 1/4 tsp

INSTRUCTIONS:

  1. Wash the brown rice with clean water. In a medium saucepan add 3 cups of water and bring it to a boil. Add rice, salt, one tsp olive oil to the pan and cook for about 20 minutes. Brown rice takes a little longer to cook. Once it’s cooked, remove from the heat and transfer it to a bowl.
  2.  Rinse the beans thoroughly. In a medium saucepan heat olive oil, gradually add beans, black pepper, garlic powder and salt to it. Saute for 2 minutes and keep it aside.

Noodles are my all-time favorites. I love to make noodles whenever I am starving, and have very little time to think.
These are really quick and easy to make.

Ingredients:
Egg noodles:1 1/2 cup
Red bell pepper cut in julienne: 1/2 cup
Large onion cut in julienne: 1/2 cup
Fresh mushrooms sliced:1 cup
Garlic /ginger sliced: 2 tbsp
Olive oil: 4 tsp
Soy sauce: 2 to 4 tbsp
Chilly sauce:1 tbsp
Salt:1/4 of tsp
Large eggs: 2
Instructions:

  1. Boil 3 cups of water in a saucepan. Add salt, egg noodles(I have used Kluski Egg Noodles), and 1 tsp olive oil to it. Cook for about 5 to 7 minutes. Drain the water and keep the noodles aside.

I downloaded Ina Garten’s meatball recipe for inspiration but then decided to cook my own version. I had ground beef in my freezer, so I used only one type of ground meats: Beef.

I like a zesty kick to my meatballs, so I added some Worcestershire sauce. To make my dish more healthy, I incorporated freshly chopped spinach into my meatball mixture.

It’s sweater weather in food form; a Fall dish in every sense: brown-ish/red-ish in color, earthy and herbaceous in taste, warm and cozy in temperature.
