Today’s Menu: Buffalo Burger Pattie Melt w/ Baked Crinkle Fries
For Breakfast this morning I Poached an Egg and served it on a toasted slice of Aunt Millie’s Light Whole Grain Bread. Also fried a couple of Jennie – O Turkey Breakfast Sausage Links and had a cup of Bigelow Decaf Green Tea. 34 degrees this morning with a high of 38 degrees and rain coming in later in the afternoon. I think our Warm Winter Days are gone! Had to deal with these Phantom Pains for the 2nd day in a row! Hate dealing with these but not a lot I can do. For Dinner tonight I had a Buffalo Burger Pattie Melt w/ Baked Crinkle Fries.

For the Super Bowl last night, Trevor was begging me to make sweet chili sauce chicken wings. While I love my beloved Franks Red Hot Sauce wings (cook the same way as below, but toss in Franks!), I decided to make both and surprise him.
Now, I went to college in Buffalo, NY where wings were created. I’ll never be able to replicate those wings from Duff’s or Anchor Bar (mostly because I refuse to fry them), but I sure can make a mean chicken wing none-the-less.
So, here’s how I make my sweet and spicy version, but in a slightly healthier way. Don’t forget the carrots and celery! You can leave out the blue cheese – I’ve never been a fan of that (but sshhhhh, don’t tell anyone from Buffalo that!)! 🙂

Fall-off-the-bone, Crispy, Baked Chicken Wings are the perfect appetizer for entertaining a small group of friends on game day.

1 Lb. Glier’s Goetta
1 Cup Cheese
1 Green Onion (Sliced)
1 Sheet of Puff Pastry (Thawed)
Salt and Pepper to taste
Preheat oven to 375F. Line a baking sheet with parchment paper. In a large pan over medium heat, cook the Goetta until browned. Transfer to a paper towel-lined plate. Whisk 5 of the eggs with salt and pepper and soft scramble in the pan. On a lightly floured surface, roll out the pastry sheet to about 12×12″. Trim the edges and cut into four 6×6″ squares. In a small bowl, whisk together the last egg and tablespoon of water to make the egg wash. Spoon and divide the filling among the 4 squares. Brush the edges with egg wash. Fold over and seal the edges with a fork. Cut small slits in each pie for ventilation and brush the surface with egg wash. Bake for 20-25…

We’re both feeling a lot better today, so time to make something we both enjoy. Pork steak in mushroom gravy is a meal that just makes me feel good. The pork has lots of flavor and the gravy gets alot of flavor from the pork. Pork steak can turn out a little chewy, but done this way it’s soft and fork tender. It’s not very often that I use premade products but a can of mushroom soup does work best for this. I have tried making it totally from scratch but couldn’t match the texture and flavor you get with the can of mushroom soup. Something’s just work and you can’t duplicate them with other things. There’s something about sweet and spicy that just works, especially when it’s on some fried chicken. So, today I want to share with you one of the first fried chicken recipes I learned. I remember making this as a little youngin… maybe I was 10 or maybe I was 13, honestly don’t remember, though I’m not sure how I got away with frying chicken at such a young age, hahaha. Then again, I’m grateful I had the opportunity to experiment with foods when I was so young, it definitely helped expand my palette and fueled my passion for cooking. Everyone loves burgers. Be it beef or chicken, we have all had a share in relishing those yummy moments. Enuff said, below is my take on what is a simple homemade that is tasty enough for any soul.
As usual, I will introduce the steps first. You may scroll all the way down for the full ingredients list.
45 mins | Serves 4
Step 1: Mix all the above.
Step 2: Flatten the mixture into 4 pancake size patty. The thickness no thicker than your index finger. Use oil for easier shaping.
Step 3: Heat the non-stick pan and place those patties on. Turn to medium heat.
Step 4: Flip after 2.5 mins.
