Today’s Menu: Buffalo Burger Pattie Melt w/ Baked Crinkle Fries

For Breakfast this morning I Poached an Egg and served it on a toasted slice of Aunt Millie’s Light Whole Grain Bread. Also fried a couple of Jennie – O Turkey Breakfast Sausage Links and had a cup of Bigelow Decaf Green Tea. 34 degrees this morning with a high of 38 degrees and rain coming in later in the afternoon. I think our Warm Winter Days are gone! Had to deal with these Phantom Pains for the 2nd day in a row! Hate dealing with these but not a lot I can do. For Dinner tonight I had a Buffalo Burger Pattie Melt w/ Baked Crinkle Fries.

Thai Sweet Chili Sauce Chicken Wings

Season Generously

For the Super Bowl last night, Trevor was begging me to make sweet chili sauce chicken wings. While I love my beloved Franks Red Hot Sauce wings (cook the same way as below, but toss in Franks!), I decided to make both and surprise him.

Now, I went to college in Buffalo, NY where wings were created. I’ll never be able to replicate those wings from Duff’s or Anchor Bar (mostly because I refuse to fry them), but I sure can make a mean chicken wing none-the-less.

So, here’s how I make my sweet and spicy version, but in a slightly healthier way. Don’t forget the carrots and celery! You can leave out the blue cheese – I’ve never been a fan of that (but sshhhhh, don’t tell anyone from Buffalo that!)! 🙂

Cajun Salmon is a spiced dish that will appeal to anyone who likes Tex Mex, Mexican or Southwestern flavours. The fact that this recipe is a sheet pan dish is an added bonus making it very quick and easy to prepare. As with all sheet pan meals, the protein is already matched with complimentary vegetable sides. If you wish, you can add a salad to really round things out.

In this particular iteration inspired by a recipe on Wellness.com, I chose to pair green beans with cauliflower for a lower carb option. It would be just as easy to pair the beans with new potatoes sliced in half or even red or yellow potatoes quartered to make sure they cook at the same rate…

Goetta Breakfast Hand Pies

Gliers Goetta

1 Lb. Glier’s Goetta
6 Eggs
1 Cup Cheese
1 Green Onion (Sliced)
1 Sheet of Puff Pastry (Thawed)
Salt and Pepper to taste

Preheat oven to 375F. Line a baking sheet with parchment paper. In a large pan over medium heat, cook the Goetta until browned. Transfer to a paper towel-lined plate. Whisk 5 of the eggs with salt and pepper and soft scramble in the pan. On a lightly floured surface, roll out the pastry sheet to about 12×12″. Trim the edges and cut into four 6×6″ squares. In a small bowl, whisk together the last egg and tablespoon of water to make the egg wash. Spoon and divide the filling among the 4 squares. Brush the edges with egg wash. Fold over and seal the edges with a fork. Cut small slits in each pie for ventilation and brush the surface with egg wash. Bake for 20-25…

The pork has lots of flavor and the gravy gets alot of flavor from the pork. Pork steak can turn out a little chewy, but done this way it’s soft and fork tender. It’s not very often that I use premade products but a can of mushroom soup does work best for this. There’s something about sweet and spicy that just works, especially when it’s on some fried chicken. So, today I want to share with you one of the first fried chicken recipes I learned. I remember making this as a little youngin… maybe I was 10 or maybe I was 13, honestly don’t remember, though I’m not sure how I got away with frying chicken at such a young age, hahaha. Then again, I’m grateful I had the opportunity to experiment with foods when I was so young, it definitely helped expand my palette and fueled my passion for cooking.   • 2 pounds cubed chicken breasts
  • 1/2 cup all purpose flour

Homemade Beef Burger

Everyone loves burgers. Be it beef or chicken, we have all had a share in relishing those yummy moments. Enuff said, below is my take on what is a simple homemade that is tasty enough for any soul.

As usual, I will introduce the steps first. You may scroll all the way down for the full ingredients list.

45 mins | Serves 4

Beef Mixture:

  • 600g minced beef
  • salt and pepper
  • dashes of cajun powder (optional)

Step 1: Mix all the above.

Step 2: Flatten the mixture into 4 pancake size patty. The thickness no thicker than your index finger. Use oil for easier shaping.

Step 3: Heat the non-stick pan and place those patties on. Turn to medium heat.

Step 4: Flip after 2.5 mins.

  • 4 slices cheese

Step 5: Wait for 1 min and add a slice of cheese on top of the patty. Do not flip over…
